Peaches, cashews and ginger complement this surprisingly versatile vegetable

in this simple. healthy and homey dish.

 

Sweet Potato - Cashew Bake

 

6 med. Sweet Potatoes

1 - 16 oz. package of frozen unsweetened

peach slices

1/2 c. Packed Brown Sugar

1/2 t. ground ginger

2 T. Smart Balance Light (vegan) or Butter

1/4 c coarsely chopped cashews

 

Peel potatoes and cut into 1/2 inch thick slices. Spray a 2 qt. rectangular

baking dish with non-stick spray. Layer half of the potato and peach

slices. In a small bowl, combine brown sugar and ginger. Sprinkle half of

the mixture over the potatoes and peaches. Repeat layers. Dot with Smart

Balance Light or butter. Bake covered in a 350 F degree oven for 45

minutes, stirring once. Uncover and sprinkle with cashews. Bake,

uncovered, about 15 minutes more or until potatoes are tender. Spoon

cooking juices over potatoes and peaches before serving. Makes 6-8

servings.

This looks an intriguing combination, Judy. No frozen peaches

available over here so I may have to wait until they are back in

season again, or do you think that canned peaches would do?
