I cooked today, yippee!!

Not a big deal but considering I'm on total bed rest (YUK) and still need help

with self care (I have graduated to brushing my own teeth, lol), this is a big

deal to me.

 

Spinach and Mushroom Rice in the Crock Pot

1, 10 ounce box frozen, chopped spinach, defrosted

1 pound sliced mushrooms

1 medium onion, chopped

1 clove garlic, mashed or chopped

1 cup brown rice, uncooked

2 cups vegetable broth

2 tablespoons olive oil

Salt/pepper as wanted

 

Toss onion, garlic clove into food processor. Push button to chop. Saute onion,

garlic and mushrooms in oil. (Or program husband person to do this step.) Mix

spinach, sauteed veggies, rice and broth together. Dump into crock pot. (Could

do in the oven I suppose) Cook till rice is soft (4 hours-ish)

 

Yay. I cooked. Heading back to bed. Zzzzzzzzzzzzzz

Cost: frozen chopped spinach .89 cents

Brown rice .25 cents (I buy 25 pounds for about 8 bucks)

Mushrooms: 1.89 (pricey but I did get a buy one get one free deal, so it came

down to about .98 cents)

Veggie broth .50 cents max. I make broth and freeze

Onion .25 cents max

Garlic clove .10 cents max

olive oil...negligible

total 2.47 to 3.47 ish We won't eat all of this, so will toss maybe a serving

worth into the freezer for a lunch for one for later.

That is wonderful, Jeanne. I am glad to read you

are doing some better and able to fix your own

healthy food as well. :)
