Veganize Chicken & Dumplings? Response

Although I have never made it myself. Morningstar Brands has Chik'n strips in

the frozen food section that may work for you. They are actually quite good . I

have also used the steak ones as well in stir fries as well. My only advice as

they tend to be a bit chewy, I pan fry them longer than they suggest to dry them

out a bit and like them better in much smaller pieces so I cut them up as well.

I would love to hear what you come up with!

My family has a similar comfort food and we usually make it on the first night

of a camping trip. It's similar to your chicken and dumplings and may give you

some ideas. I slice 6 or 7 mushrooms, a 1/2 lb of asparagus and a medium onion

and saute them until soft. Then I add cream of mushroom soup and 2 crumbled soy

sausage (adds a tang). As it heats through I drop in the dumplings, cover and

cook until the dumplings are done. Sometimes we add grated cheddar to the top

when served. I've had meat-eaters partake with no clue that it was (ack!)

vegetarian. I'll bet you could experiment (for instance with the Chik'n strips

mentioned below) to make it closer to your comfort food taste! Kathy
