Guest guest Posted December 28, 2006 Report Share Posted December 28, 2006 Guacamole with Vegetables 1 bunch baby carrots, trimmed 3 celery ribs, cut into strips 1 red bell pepper, seeded, deveined and cut into strips 1 green bell pepper, seeded, deveined and cut into strips Tortilla chips ~~~Guacamole~~~ 3 ripe avocados 2 TB lemon juice 2 TB lime juice Salt and ground black pepper 2 tomatoes, peeled, seeded and diced 1 red onion, chopped 1 garlic clove, minced 1 jalapeño pepper, minced 1/2 cup fresh cilantro sprigs, finely chopped To make the Guacamole: Cut the avocados lengthwise in half, then separate the halves, twisting slightly. Remove the pits. Scoop out the meat from the avocado halves, and place in a large bowl. With a fork, mash immediately with the lemon and lime juice, 1/2 teaspoon salt, and a pinch of black pepper. Stir the tomatoes, onion, garlic, jalapeño, and cilantro into the avocado. Serve with the prepared vegetables and tortilla chips. Serves: 8.
