Guest guest Posted December 28, 2006 Report Share Posted December 28, 2006 Cheddar Cheese Ball 12 oz. sharp Cheddar cheese, cubed 6 TB unsalted butter, softened 1 can (4 oz.) canned chopped green chilies 2 tsp. bourbon, optional 1/2 tsp. Tabasco hot pepper sauce 1/4 tsp. salt 6 TB chopped walnuts or pecans 1 TB fresh parsley, finely chopped Assorted crackers 1. In a food processor, mix the cheese, butter, chilies, bourbon, pepper sauce and salt until as smooth as possible. Place in a bowl, cover and refrigerate for 30 minutes, or until firm. Shape into a ball. 2. On a plate, toss together the nuts and parsley. Roll the cheese ball in the nut mixture until completely coated. Serve with assorted crackers. Serves: 12.
