The Cautious Vegetarian..recipes (vegan)

Wow I just made polenta for dinner tonight. I simmered it for about 30 minutes

until real thick. Then place aside for about 10-15 minutes to cool. I topped it

with some vegan margarine and Muir Glen fire roated crushed tomatoes. It was

good.

 

TVP you prepare like ground beef, heat it up in a skillet with some water, you

can add taco seasoning, and put on top of corn chips with soy cheese and black

beans. Put in broiler for about 5 minutes to melt cheese. Eat with a side of

sliced avacado or top with a tasty salsa.

 

 

Quinoa is wonderful and so good for you. I usually prepare it and use it like

I would rice. Top with stewed tomatoes, margarine or Braggs Liquid Aminos.

Quinoa is an excellent source of essential amino acids.

 

Lentils cook well and make their own flavorful broth. Simmer for 30 mintues

and add olive oil and salt. Yummy.

 

I hope these recipes are simple enough for you. I likesimplicity as well as I

don't have alot fo time and energy to be a gourmet chef. :o)

Personally, I could live on my rice, tofu and squash bowls forever,

but I'm really trying to broaden my horizons, and make sure my diet is

interesting and nutritionally sound. I have purchased cookbooks,

cruised the recipies, but frankly, everything is too exotic for my

bland, simple palate. I was bold enough to go to whole foods recently

and purchased: polenta, TVP, tempeh, lentils and quinoa. I am finaly

ready to cook them, I think. (New foods must sit in the cupboard and

be stared at for an appropriate amount of time). Any suggestions on

vey simple ways to prepare these would be great :)
