Guest guest Posted November 24, 2006 Report Share Posted November 24, 2006 Molasses Hermits 1/2 cups shortening (butter works just fine) 1/2 c. brown sugar, firmly packed 1/4 c. molasses 1 egg, beaten 1 c. seedless raisins, chopped 3/4 c. walnuts, chopped 1 3/4 c. sifted all-purpose flour 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. each cinnamon and nutmeg 1/4 c. cold coffee or milk Heat oven to 400 degrees F. Cream shortening and sugar; add molasses, then egg, and mix thoroughly. Sift flour, salt, soda, and spices together into a medium-size bowl; stir in raisins and nuts. Add alternately with coffee (or milk) to creamed mixture. Drop by rounded teaspoonfuls about 1 1/2 inches apart onto greased baking sheet. Bake for 10-12 minutes. Makes about 4 dozen cookies. I frosted mine with a glaze made of confectioner's sugar and milk -- drizzle over cooled cookies or frost completely, as desired. The spices mellow together, so these cookies are better several days after baking.
