Sweet potatoes

This is my first recipe posting since joining. If you don't like all that sweet

stuff on sweet potatoes this is for you. Plus it is really good and is simple to

do and can be made ahead of time.

5-medium sweet potatoes {10oz. Each}

 

½ cup cranberry whole sauce

 

½ cup dried cranberries or raisins nipped or chopped

 

2 T. butter, soft or melted

 

½ tsp. Salt

 

½ cup walnut or pecan pieces toasted

 

 

 

Preheat oven 325 degrees. Scrub potatoes and pierce all over with fork. Bake for

1 ¼ -1 ½ hours or till tender. Set aside to cool slightly.

 

 

 

Cut each potato in half lengthwise. Use a spoon, to scoop pulp form each potato

half, leaving a ¼ -to a ½ -inch shell. Place pulp in a medium bowl.

 

 

 

Mash potato's until smooth, Stir in cranberry sauce, dried cranberries, butter,

and salt. Spoon potato mixture into each potato shell. Sprinkle with walnuts.

Put in baking pan and bake for 25-35 minutes till hot. Makes 10 servings/

 

 

 

May make ahead, cover and chill. Preheat oven to 350 degrees, bake uncovered for

30-35 minutes or until heated through.
