Pumpkin Mousse

1 cup pumpkin puree (from canned pumpkin or fresh)

1-1/2 teaspoons ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/2 cup powdered sugar

2 cups whipped cream (from fresh or frozen)

 

1/2 c crystallized ginger, chopped

 

Mix spices and sugar into pumpkin, then gently fold in whipped cream. Top

with crystallized ginger.

 

This is great on its own, or used to top waffles, shortbread cookies, etc.
