Guest guest Posted November 21, 2006 Report Share Posted November 21, 2006 3 green onions, cut in 1 inch lengths 2 tablespoons vegetable oil 2 cloves garlic 1 tbsp fresh lime juice 1 tbsp chili powder 1 tsp ground cumin 1/2 tsp salt 1/4 tsp cayenne 1 can kidney beans, rinsed and drained 1 can pinto beans, rinsed and drained 1 can chickpeas (garbanzo beans), rinsed and drained 1 can mild green chiles 1 cup reduced fat sour cream 1 cup mild or medium spicey salsa cilantro sprigs, for garnish tortilla chips In a food proessor, process green onions, oil, garlic, lime juice, chili powder, cumin, salt and cayenne until green onions are very finely chopped. add kidney beans, chickpeas, pinto beans and chiles; process until well blended, but not totally smooth. spoon half into medium glass serving bowl. spread with 1/2 cup sour cream and 1/2 cup salsa. add remaining bean mixture, spread with remaining sour cream and dollop with remaining salsa. garnish with cilantro sprigs; serve with tortilla chips.
