Guest guest Posted November 19, 2006 Report Share Posted November 19, 2006 1 cup cold cooked white rice 1 tbsp olive oil 1 cup cornmeal 1 tbsp grated parmesan cheese 1 tsp baking powder 1 tsp onion powder 1/2 tsp garlic powder 1/2 tsp dried mixed herbs 1 cup skim milk 1/4 cup fat free egg substitute 1/4 cup nonfat sour cream in a small bowl, mix the rice and oil, use a fork or potato masher to lightly mash the rice. in another small bowl, mix the cornmeal, parmesan cheese, baking powder, onion powder, garlic powder and herbs. in a large bowl, whisk together the milk, egg and sour cream, add the cornmeal mixture and stir to cobine. fold in the rice. transfer to a 8x8 baking dish coated with nonstick spray. bake at 400 degrees for 30 minutes.
