I make this same salad using Red Wine Vinegar. I will have to try the oil

mixture!!!

Cucumber Tomato Salad

 

 

Cucumber Tomato Salad

 

This is a fantastic tasting salad that I often take to pot lucks or

BBQ's. I got it out of a Suzanne Sommers cookbook.

 

2 medium cucumbers, seeded and chopped (I usually make them 1/4 " pcs)

4 medium tomatoes, chopped

1 medium red onion, thinly sliced

1 recipe Balsamic Vinaigrette (see below)

Salt and freshly ground black pepper

 

Combine the cucumbers, tomatoes, and red onion in a medium bowl.

Toss with the vinaigrette and season with salt and pepper. Let

marinate for about 30 minutes. (Do not refrigerate - the tomatoes

will get mealy).

 

Balsamic Vinaigrette

 

2 tablespoons balsamic vinegar

Salt and freshly ground black peper

6 tablespoons olive oil

 

Place the vinegar in a mixing cup (or small bowl) with salt and

pepper to taste. Add the olive oil in a slow stream, constantly

whisking until the oil is emulsified. For a tangier dressing, add

more balsamic vinegar.

Cucumber Tomato Salad

 

2 large cucumbers, diced (peeling optional)

2 large tomatoes, diced

1 medium green pepper, diced

1 medium onion, diced

1 bottle (8oz) fat-free Italian salad dressing

Sugar substitute equivalent to 2 tsp sugar

 

In a bowl, combine the cucumber, tomato, onion, and pepper. Combine

salad

dressing and sugar (or substitute); pour over vegetables. Toss to coat.

Refrigerate for at least 1 hour, best if overnight. Serve with slotted

spoon.

Yield: 14 servings approx
