I got it out of a Suzanne Sommers cookbook. 2 medium cucumbers, seeded and chopped (I usually make them 1/4 " pcs) 4 medium tomatoes, chopped 1 medium red onion, thinly sliced 1 recipe Balsamic Vinaigrette (see below) Salt and freshly ground black pepper Combine the cucumbers, tomatoes, and red onion in a medium bowl. Toss with the vinaigrette and season with salt and pepper. Let marinate for about 30 minutes. (Do not refrigerate - the tomatoes will get mealy). Balsamic Vinaigrette 2 tablespoons balsamic vinegar Salt and freshly ground black peper 6 tablespoons olive oil Place the vinegar in a mixing cup (or small bowl) with salt and pepper to taste. Add the olive oil in a slow stream, constantly whisking until the oil is emulsified. For a tangier dressing, add more balsamic vinegar.
