Start with Soy Milk Paco and the gang -- Soymilk Maker

Before spending the money for a soymilk maker, I recommend making a

batch or two by hand so you can make sure that you like the taste

before spending the money. You only need a thick-bottomed pot, an

immersion blender or regular blender and a strainer or collander with

a lint-free cloth or cheese cloth for filtering out the okara. I very

much like the taste, but it is different from dairy milk, not worse or

better to me. You can also make a thicker or richer milk by just using

more soy beans in proportion to the water -- which is one reason I

like making it by hand; You can vary the recipe to make smaller or

larger (or richer) amounts than are usually accomodated by the

machine. I use 185 grams of dry beans (about 1 full cup) to make 2

liters (1/2 gallon+) of milk. I add about 25 g brown sugar (1-1/2

Tablespoons) and 4 g salt (1/2 teaspoon) and add about 2/3 cup extra

water for water lost by boiling and straining.

 

A couple quick tips are, first to soak the beans overnight beforehand,

much better and easier results. Another, I soak several of the

measured amounts of beans for a single batch, strain them with a

collander and store each in individual small containers in the

freezer. Thay way you have batches of beans pre-soaked, measured and

ready to go when you want to make milk. Just put them frozen into the

pot or the machine. The fresh water boils up around them as they're

ground and it doesn't matter that they were till lately frozen.
