Combine: 1/2 cup low-sodium Tamari 1/2 cup filtered water 1/2 cup Newman's Own Olive Oil & Vinegar Dressing Note: or make your own dressing Next, the Kebab Ingredients: 8 wooden skewers (soaked in water for 1 hour) 24 button mushrooms or portabello chunks 16 cherry tomatoes 16 large basil leaves 16 thick slices of zucchini 16 large mint leaves 16 squares of sweet red pepper 1 pound extra firm tofu cut into approx. 1-1/2 " cubes Place tofu cubes in a container and cover with marinade. Put in the refrigerator, covered. Soak skewers. Wash and prepare vegetables. Thread vegetables onto skewers. Place basil leaves next to tomatoes and mint leaves wrapped around zucchini slices. Serve over bed of brown or white basmati rice. If desired, use marinade, further diluted, as sauce.
