I have a friend here in the Philippines who can grow soy beans and has a milk allergy to goats as well as cows milk. He is nearly a vegetarian, as he put it. Any information will be a start in the right direction. We both love tofu and yogart and keifer. We both would like to make some soft cheeses and some pressed cheeses.
