I sliced an eggplant, dipped it in a mixture of beaten eggs and milk, then in crushed cracker crumbs. They're these Ritz crackers with vegetables baked into them. This was my best eggplant ever. The crackers were a very nice touch, if anyone cares to try this. I think it would also be great for fried zucchini. I might try that eventually.
