Guest guest Posted November 13, 2006 Report Share Posted November 13, 2006 @@@@@ LEEK PATTIES 6 large leeks (white and light green parts only), washed well, halved lengthwise and crosswise 2 eggs, beaten 1/2 cup dry bread crumbs 1 teaspoon salt freshly ground pepper to taste 2 tablespoons canola oil Boil the leeks in boiling water until soft. Drain well. Squeeze out moisture. Coarsely chop the leeks. Place in a bowl. Stir in eggs, bread crumbs, salt and pepper. Brown both sides in canola oil. Make 8 patties.
