Guest guest Posted November 13, 2006 Report Share Posted November 13, 2006 @@@@@ SCRAMBLED TOFU AND LEEK 1 small leek 1/2 - 3/4 cup firm lite tofu 1 tsp turmeric 2 tsp soy sauce 2 tsp prepared mustard black pepper to taste whole wheat toast as required 1. Wash and chop the leek finely. Heat saute liquid in pan and add the leek. Stir well, cover pan, and cook over very low heat for about 5 minutes. 2. Mash the tofu in a bowl with the turmeric, soy sauce, mustard and pepper to taste. 3. Add the tofu mixture to the saucepan and mix well. Cook until well heated. Serve immediately over hot toast.
