I don't give amounts because it is one of those handful of this, that and other things. You'll understand why this is made only once or twice a year. Sweet Potato Casserole Sweet potatoes, baked Brown sugar Chopped pecans Coconut Butter or margarine, melted Pumpkin pie spice or mixture of cinnamon, cloves, allspice, etc Let baked sweet potatoes cool to the point you can peel without giving yourself second degree burns. Mash sweet potatoes, add some butter or margarine, a little salt and spices of your choice. Spoon into oblong baking dish. (Why oblong? So you have more surface to put the sweet mixture on, of course.) Mix brown sugar, chopped pecans, coconut and a little melted butter or margarine together, then scatter generously over the nice, healthy sweet potatoes turning them into pure dietary evil. Bake at 350*F till heated through, about 30 minutes. Serve in baking dish. OR mix one beaten egg into mashed, seasoned sweet potatoes. Spoon into baked pie shell. Top with evil mixture of sugar, nuts and coconut. Bake at 350* for about 45 minutes. Leftover use: Depending on how much is left, mix in an egg to bind, pour into baked pie shell(s) and bake.
