Guest guest Posted November 13, 2006 Report Share Posted November 13, 2006 @@@@@ Kefte di Prasa - Sephardic Veggie Leek Burgers 6 large leeks, cut in 2 " pieces 1 large boiling potato, peeled 2 cloves garlic, crushed 1/2 cup matzo meal 1 tsp. salt 1 tsp. pepper 2 large eggs, lightly beaten 2 cups vegetable oil, for frying In a large pot, boil the leeks for one hour, or until they are so soft that they will disintegrate when squeezed. Remove from the heat and drain in a colander. When they are cool, squeeze out all the excess water; they must be dry. In a small saucepan, boil the potato for 10 minutes, or until it is completely soft. Drain and mash. In a mixing bowl, combine the leeks, mashed potato, and garlic. Fold in the matzo meal and season with the salt and pepper. Add the eggs and mix. Heat half the oil in a large skillet over medium-high heat. Form the leek mixture into patties the size of small hamburgers. If the mixture is too moist to form into patties, add a little more matzo meal and try again. Fry the patties in batches, turning once, until golden on both sides, about 3 minutes per side. Add more oil to the skillet as needed. Drain the patties on paper towels and serve hot.
