Guest guest Posted November 9, 2006 Report Share Posted November 9, 2006 Vegetarian Chili with Chipotle 1 cup carrot, chopped 1 cup red or green bell pepper, chopped 1 cup chopped onion 3 cloves garlic, minced 1 tablespoon chili powder 2 teaspoons ground cumin 1 28 oz. can plum tomato, undrained and chopped 1 15 oz. can kidney beans, drained 1 15 oz. can cannellini beans, drained 1 15 oz. can black beans, drained 2 tablespoons chipotle chiles, chopped Place tomatoes in a soup pot. Add vegetables and spices. Cook for 30 minutes, stirring occasionally.
