mild zesty salsa

My anti-veggie family gobble this up. It's a staple at our house.

 

1 28 oz can of pettite diced tomatoes

add a small 14 oz can of tomatoes if you want less zesty salsa

1 diced yellow Melissa pepper

a few strips of diced red bell pepper

1 bunch of cilantro

3 lemmons

salt and pepper to taste

 

Romove the leaves from the cilantro. It's ok if you have some stems

are left on. I just chop the tops off with scissors. Soak the cilantro

in a large bowl of water to remove dirt. Diced peppers. Juice the

lemons. Combine all ingredients in a blender. Blend on high until

mostly smooth. Just a few seconds. I like a little texture. Use your

discretion. Refrigerate over night. Serve cold with tortilla chips or

use as condiment.
