Guest guest Posted November 7, 2006 Report Share Posted November 7, 2006 OK, off the top of my noggin: Candied carrots, potatoes and onions (home fries sort of thing but done in the oven) and sliced tomatoes with Italian dressing or light dressing of your choice. For the candied carrots, scrape, cut into slices or chunks, boil , drain, add butter (margarine), a dash of cinnamon and sweetener of choice: non sugar stuff, honey, brown sugar, white sugar. For the oven home fries: Peel potatoes, slice. Peel onions, cut in half, slice thinly. Toss potatoes and onions together with a little salt and pepper. Put a few dots of butter on top, cover with foil and bake at 350*F for an hour or till potatoes are soft. Or scallop potatoes with light white sauce, or au gratin with cheese sauce. For the tomatoes: Slice, sprinkle with a little extra virgin olive oil and a little freshly ground black pepper. Do you have any green chomp around to go with dinner? Tell me what you guys like/don't like and when I am back from dog walkies I'll think more.
