Holiday Cooking: Orange Slice Squares

These ship well and are always requested for the Holidays. When my sons were in

basic training this is one of the cookies they always wanted.

 

Orange Slice Squares (Makes about 3 dozen)

1 pound orange slice candy (I don't know what is in them, so if it is gelatin, I

am sorry, and beg forgiveness on my knees, tearing my hair out)

1/2 cup margarine or butter, melted

2 cups firmly packed brown sugar

2 cups all-purpose flour

4 eggs, beaten

1 cup chopped pecans

1 cup flaked coconut

1 or 2 cup powdered sugar (could take more than that for dusting the cookies,

trust me)

 

You will hate me if you make these cookies unless you have a food processor.

Even then you'll still hate me because you will be nagged for the rest of your

days if your family/friends like these. Why? Because it is a total PAIN to

finely dice the orange slice candy. The easiest way is to toss a few pieces in

the food processor along with some granulated sugar (maybe a tablespoon) and

pulse till it is diced. Don't try doing the entire pound at once; all you will

get is a huge BLOB of orange candy. The other way is to dip knife in hot water,

make a cut. Dip knife back in water, make another cut. Repeat till the entire

huge bag of candy is cut up. You'll see why these only get made for holidays.

 

Combine butter and sugar in a large mixing bowl; stir in eggs, mixing well. Add

flour, candied orange slices, coconut and pecans; stir until well blended.

 

Line a 15X10X1 " jelly roll pan with greased parchment paper or greased waxed

paper. Bake at 350* F for 25 minutes. Remove from oven; let cool 15 minutes in

baking pan. (The smell will be intoxicating, make these when you are alone.

You don't want young children to hear the words you might have used over the

chopping of the evil orange slice candy.) Sprinkle countertop with

confectioner's sugar and flip cookie pan onto this. Since you were so clever to

remember the well greased parchment or well greased waxed paper, it will come

out, otherwise...um...don't forget. You shouldn't be using language like that!

 

Next cut the cookies into squares, rectangles or diamonds. For decades I cut

with a knife and snarled when the cookie stuck to the blade. Then I started

using a pizza cutter that had been dipped in confectioner's sugar. Worked like

a charm when I remembered to dip the cutter in the confectioner's sugar between

slices. Dump a couple cups of powdered/confectioner's sugar in a medium bowl,

roll each cookie into it, putting them either on serving plate, cooling rack,

air tight sealed tin, etc. If you stack the cookies, put waxed paper between

the rolls.

 

There, you're done. The evil Orange Slice Squares are finished. Get a cup of

whatever hot liquid you have earned and try one of the evil cookies. ONE.

 

 

These ship VERY well and made it all the way to Anchorage Alaska from Albany, GA

and were still fresh and moist.
