Bjornkaka (bear bread)

 

2 eggs

2 cups flour

1 1/2 cups sugar

1 cup milk or soy milk

1/5 lb. butter or margarine, melted

Just under one stick in measurements

2 tsp. baking powder

2 tsp. cinnamon

2 tsp. cardamom

 

Beat the eggs and sugar until well blended. Beat in

the shortening. Add dry ingredients and milk and beat

until smooth. Bake in 2 8-inch well greased bread

loaf pans at 325 degrees for 50 mins or more until

toothpick comes out dry. Cool on racks. Loosen sides

and invert. Freezes well and is better if kept a day

before serving.
