Guest guest Posted November 6, 2006 Report Share Posted November 6, 2006 Black-Eyed Pea and Tomato Salsa vegetable cooking spray 1 cup chopped onion 2 garlic cloves, minced 1/4 teaspoon ground cumin 1/4 teaspoon ground pepper 1 15 oz. can black-eyed peas, drained 1 14 1/2 oz. can whole tomatoes, undrained and chopped 1/3 cup minced fresh cilantro 1 tbsp. finely chopped fresh jalapeno pepper Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add onion,and garlic; saute 5 minutes. Stir in cumin, pepper, black-eyed peas, and tomatoes; bring to a boil. Remove from heat; stir in cilantro and jalapeno pepper. Spoon into a bowl; cover and chill 1 to 8 hours.
