Guest guest Posted November 5, 2006 Report Share Posted November 5, 2006 The nutritional yeast gives this a cheesy flavor Mushroom, Tofu and Sweet Pepper Quiche 2 tsps. olive oil 2 garlic cloves, minced 1 medium onion, chopped 2 lbs. medium-firm tofu 1 medium green pepper, chopped 2 tbsps. nutritional yeast 2 1/2 c. sliced mushrooms 1 tsp. salt Heat oil in a medium sized skillet and saute vegetables and garlic till limp. In a large bowl, crumble or mash tofu. Add sauteed vegetables, yeast and salt. Preheat oven to 350 degrees. Spread tofu mixture evenly into a 9 1/2 " or 10 " quiche pan. Bake for 30 to 40 minutes, till the edges start to brown. Garnish with tomatoes.
