Guest guest Posted November 2, 2006 Report Share Posted November 2, 2006 @@@@@ Diabetic Blueberry Filling 2 pt Blueberries 2 T Cornstarch 3 oz Cheese, cream; cubed 1 t Extract, vanilla ¨ø c Fruit spread, blueberry 1/4 ts Nutmeg, ground Combine blueberries and cornstarch in medium bowl; toss lightly to coat. Add fruit spread and nutmeg; mix lightly. Spoon into crust. Bake 10 mins at 425 degrees. Take out of oven and glaze (1 egg yolk mixed with 1 T sour cream). Put back in oven at 350 degrees until crust is browned. Remove from oven and cool on rack.
