Guest guest Posted November 2, 2006 Report Share Posted November 2, 2006 Paglia e Fieno (Straw and Hay) 8 ounces plain egg fettuccini noodles 8 ounces green fettuccini noodles 1/2 stick butter (or margarine) 1 teaspoon flour 1 cup light cream (or milk, or soy milk) 1/4 to 1/2 cup grated Parmesan cheese (please, I beg you, not the stuff in a can, use fresh Parmesan and grate it yourself our buy finely grated Parmesan in a bag) Cook noodles according to package directions. (Yes, in same pot) While they are boiling, melt half the butter in a small pan and add flour, stirring and cooking till smooth. Slowly add the cream (or milk) to the flour and butter mixture; sooking and stirring over a low heat for 3 minutes. Drain noodles and pour into serving bowl. Add sauce, rest of butter, and cheese.
