Think " Close Encounters of the Third Kind. " Volcano Potatoes 4 or 5 medium potatoes, peeled, cubed 3/4 cup milk (approximately) 1/2 cup unsweetened whipping cream 1/2 cup American or Cheddar cheese, finely grated Salt, pepper to taste Boil potatoes in salted water till done. Drain well and mash, adding just enough milk to make fluffy but not runny. You want the potatoes to hold their shape. Add salt and pepper to taste. Whip heavy cream until soft peaks form; fold in grated cheese. Grease an 8 " round baking dish and make a mountain-shaped mound of mashed potatoes in the center. Make a crater in the center, building up the sides till it looks like a volcano. Pour the whipped cream and cheese mixture into the center of your potato volcano, letting it run down the sides.
