Wild Oats Organic Olive Oil 2 Tbsp. fresh cilantro, chopped 1 Tbsp. green onion, chopped 2 Tbsp. celery, diced 1 tsp. granulated garlic 1/2 tsp. ground cumin 1/4 tsp. cayenne 1 Tbsp. fresh lemon juice 1/2 cup fresh tomatoes, diced or cherry tomatoes salt and cayenne pepper to taste Cube tofu into about 1/2 inch, dice and place in a large mixing bowl. Add salsa, olive oil, cilantro, green onion, celery, garlic, cumin, cayenne and lemon juice. Mix well and let sit at least 15 minutes. Stir in fresh tomatoes. Taste and season with salt and cayenne as desired. Serve with tortilla chips, in a burrito or on a tostada. The tofu absorbs the fresh flavor of cilantro, onion, garlic and salsa.
