In fact it would also make great dinner rolls if you cut the dough in slices. I usually use honey when I make bread, but I could use maple syrup, which would give a different flavor. The amount of flour should not be a problem--most bread makers get used to the right " feel " that dough has when it has enough flour in it. You can also roll out the yeast bread and then put your spinach and cheese in the center of the bread and roll jelly roll style. I play around with it, and I usually lose count as to how many cups of flour get added. You are correct I do it by feel.
