Lowfat Zucchini Bread

 

Jenns Notes: This is a recipe that I have used. I have a lowfat recipe that also

uses Applesauce but I do not like it. I also do not know why it would say with

the skin on. I always take the skin off

 

Ingredients

 

1/4 cup Canola oil 1 1/2 cup brown sugar

1 cup nonfat vanilla yogurt 2 cup white flour

1 cup wheat flour 4 egg whites

1 tsp. baking soda 4 tsp. cinnamon

1 tsp. baking powder 2 tsp. nutmeg

2 cup grated zucchini (w/skin on) Non-fat cooking Spray

 

Preparation

 

Sift together flours, soda, baking powder, cinnamon, & nutmeg. Set aside. Mix

together, oil, yogurt, egg whites, and brown sugar. Blend at high speed, with

electric mixer. Stir in dry ingredients with a spoon. Add grated zucchini. Pour

into two loaf pans that have been sprayed with cooking spray. Bake 30 minutes at

350 degrees and then 20 minutes at 325 degrees. Remove from pans to cool.

Freezes very well.
