When my daughter suggested making this recipe for the Chili Cook Off that she wanted to enter at school I was alittle sceptical, Who puts pumpkin in chili? Well guess what she made it and she placed 2nd in the contest. Pumpkin Chili; Ingredients 2 c. Canned pumpkin 3 pkg. veggie meat crumbles 2 cans red kidney beans ( we used Yves Ground Chiken) 2 medium onions chopped 3 cans Cut Tomatoes, 15 ounces 2 T. Chili powder 1/4 t. Red Pepper (optional) 2 T. Sugar 1 t. salt 2 Bay leaves Put veggie meat crumbles in crockpot then add remaining ingredients. Cook on low 6-10 hours.
