Guest guest Posted October 21, 2006 Report Share Posted October 21, 2006 Tofu Loaf 1 medium onion 1 cup rolled oats (or whole grain vegan bread crumbs or crushed cornflakes) 1 1/2 pounds firm tofu, drained, patted dry & mashed 1/2 cup chopped parsley 1/3 cup soy sauce 1/3 cup ketchup 2 Tablespoons Dijon mustard 1/4 teaspoon black pepper 1/4 teaspoon garlic powder Preheat oven to 350 degrees Mix all ingredients together. Press the mixture into a greased loaf pan (you can spray a bit of non-stick cooking spray, too) Bake for one hour. Let cool about 15-20 minutes before trying to remove from pan. Slice and enjoy!
