Guest guest Posted October 20, 2006 Report Share Posted October 20, 2006 Roasted Garam Masala Spice Blend Makes: 1/2 cup 3 tablespoons cumin seeds 3 tablespoons coriander seeds 2 tablespoons black peppercorns 1 tablespoons cardamom seeds 1 teaspoon whole cloves 1 3-inch cinnamon stick, broken into bits 4 bay leaves, broken into bits 1 teaspoon grated nutmeg Place all the spices except nutmeg in a frying pan over medium-high heat. Roast, shaking the pan, until the spices smoke, release aroma and turn several shades darker, about 6 minutes. Turn off heat. Stir in the nutmeg.
