Mark Chili Roasted Potatoes 1 pound small new potatoes, scrubbed 1/2 cup vegetable oil 1 teaspoon chili powder 1/2 teaspoon red pepper flakes 1 teaspoon salt 1 tablespoon basil Cook potatoes in a saucepan of boiling water for 10 minutes, then drain thoroughly. Pour a little of the oil into a shallow roasting pan to coat the base. Heat the oil in a preheated oven at 400 for 10 minutes. Add the potatoes to the pan and brush them with the hot oil. In a small bowl, mix together the chili powder, red pepper flakes, and salt. Sprinkle the mixture over the potatoes, turning to coat them evenly. Add the remaining oil to the pan and roast the potatoes in the oven for about 15 minutes, or until potatoes are cooked through. Remove from oven and drain on paper towels.
