Guest guest Posted October 18, 2006 Report Share Posted October 18, 2006 hi everyone, only a few days in and i can already tell this is a great group! loads of fun and yummy recipes. here is my best ever creation, a date and carrot cake/loaf. i love it, 'cause i can make it to suit anybody and everybody, and it's ridiculously easy!! jo, in springtime melbourne, australia where it's just warming up - tempted to ask you all for your favourite spring time recipes/activities! if you can all remember it!! jo's carrot and date loaf 1 cup grated carrot 1 cup self-raising flour (i use mix of white and wholemeal, or sometimes gluten-free for friends) 1 cup milk - can be ANY kind 1 cup chopped dates - possibly the best snack on the planet 1 cup shredded coconut 1/2 cup brown sugar - or honey, different but equally yummy result. mix all and bake in greased loaf pan for about 1hr in a 180c oven. (sometimes, depending on what i have on hand, i substitute the carrot and dates for bananas and dried apricots, i reckon heaps of other subs could work as well!!) My sister is using it for a fellow office mate when she bakes goodies for the office, he gets his own dessert with no flour. She has tried using the Gfree but it has not gone well. Can I ask about hints you have used and clues to help her? anyone else also.. please. She is the office baker and wants to do well. thanks every so much, good luck and good eats. Guest guest Posted October 19, 2006 Report Share Posted October 19, 2006 hi cin, yeah it's tricky working with gluten free flour. i have found some success with adding a little extra (gluten free of course) baking powder, but by and large you need to expect things to come out flatter and moister. that's one of the things i love about this recipe, it's such a dense, moist thing anyway, the gluten free problems aren't so problematic. mostly if i'm cooking cakes or muffins etc for my sis-in-law (coeliac - spelling?!) i avoid the gluten-free flour and go for almond meal or polenta instead. i made a DELICIOUS portuguese lemon polenta cake a few weeks back, i'll dig up the recipe and post it when i can. thanks for the welcome isis - just gotta find some time to browse those files!! cheers, jo Quote Link to comment Share on other sites More sharing options...
