Guest guest Posted October 18, 2006 Report Share Posted October 18, 2006 Oven-Roasted Carrots and Sweet Potatoes butter-flavored cooking spray 1 pound carrots, peeled and cut into 1-inch chunks 1 pound sweet potatoes, peeled and cut into 1-inch chunks 2 tablespoons vegetable stock 11/2 tablespoons melted butter Kosher salt and freshly ground black pepper to taste 1 teaspoon ground mace Preheat oven to 500 degrees. Spray a shallow roasting pan with cooking spray. Put carrots and sweet potatoes in the roasting pan. Combine stock, butter salt, pepper, and mace in a cup. Pour over carrots and sweet potatoes and toss. Roast about 25 minutes (tossing twice) or until tender. Makes 4 servings.
