Guest guest Posted October 16, 2006 Report Share Posted October 16, 2006 Multigrain Cranberry Muffins 1 cup milk 3 tablespoons vegetable oil 1 cup uncooked multigrain cereal 1 3/4 cups unbleached flour 3/4 teaspoon salt 1 1/4 teaspoons baking powder 1/4 teaspoon ground mace 2 teaspoons vanilla 2/3 cup brown sugar, packed 1 egg 1 cup dried cranberries raw sugar for garnish or coarse-grained colored sugar Preheat oven to 400 degrees. Generously grease 12 large (2 3/4-inch) muffin cups. In a large microsafe measure, heat milk and oil until very warm, 60 to 90 seconds. Stir in multigrain cereal; let stand 10 to 15 minutes. In a large bowl, mix together flour, salt, baking powder and mace. Stir vanilla, brown sugar and egg into cereal mixture. Add to flour mixture; stir until almost moistened. Stir in cranberries, but do not overbeat. Scoop into muffin tins. Sprinkle with raw or colored sugar. Bake in lower third of oven for 15 minutes or until done. Let cool in pans for 5 to 8 minutes, then remove to racks to cool completely. Yields 12 muffins. Be smarter than spam. I am new to this and I am really enjoying the fun new recipes and great ideas. So thank you so very much everyone. I have been a vegetarian all of my adult life as well as my three daughters but I always love to hear what others like to eat and am always looking for fun new things to try.
