Sauteed Green Beans with Bread Crumbs

 

1 pound green beans, trimmed

1 tablespoon butter

1 tablespoon extra-virgin olive oil

2 tablespoons minced shallots

sea salt and freshly ground black pepper to taste

3 tablespoons seasoned bread crumbs

1 tablespoon chopped fresh parsley

 

Boil or steam beans, then chill in ice water. When the beans are completely

cooled, about 10 minutes, drain them well. To finish off the beans, heat butter

and oil in a large skillet or wok over medium-high heat. Add shallots and cook

about 30 seconds. Then add beans, salt and pepper.

Cook 2 minutes, stirring frequently. Add breadcrumbs and parsley. Cook, stirring

frequently, until the breadcrumbs are crisp and nicely browned and the beans are

hot, about 2 minutes. Yields 4 servings.

I make this, and I also add a little parmesan cheese.
