Easy Vegan Chile and Corn Bread

This was yummy! I have to mess with the corn bread a little as it turned

out a little dry, but it tastes good nonetheless.

 

*Vegan Chile*

1 can each black, kidney, and pinto beans

1 can stewed tomatoes

1 can tomato sauce

2 pkgs chile mix

1 sml onion chopped

1 can green chiles

Hot Sauce to taste

 

Slowcook 2-3 hours

 

*Vegan Corn Bread*

1-1/4c sifted whole wheat flour

3/4c corn meal

1 tbsp flax meal

2 tsp baking soda

1/4 c brown sugar (I will probably use 1/2 cup next time or throw in some

sweet white corn)

1c rice milk

1 whole egg using egg replacer

1/4c vegetable oil (will try 1/2 next time)

Add green chiles to taste

 

Mix ingredients, grease and bake in loaf pan at 400 degrees for 40 minutes

or until wooden pick inserted comes out clean.
