Toss the whole thing over whole wheat pasta and toss with a handful of minced red/green/yellow bell peppers and red onion. @@@@@ Kale with Peanut Mustard Dressing 1/2 cup water, for the dressing 2 teaspoons any Eden Organic Mustard 4 Tablespoons organic unsalted peanut butter 2 teaspoons Eden Shoyu Soy Sauce 4 cups kale, throughly cleaned and chopped 2 cups water, for blanching kale Bring 2 cups of water to a boil and blanch the kale for 1 1/2 to 2 minutes. Remove and rinse quickly under cold water to set the color. Drain and place in a bowl. Place 1/2 cup water, mustard, peanut butter and shoyu in a blender and puree until creamy. Serve over the kale. Almond or cashew butter may be substituted for peanut butter. Chopped parsley, chives or green onions may also be added to the dressing for different flavors. Serves 4 source: Eden Foods Inc.
