Guest guest Posted October 15, 2006 Report Share Posted October 15, 2006 Gourmet Cheese and Onion Soup pressure cooker 10 min 4 servings 4 onions 2 1/2 pt. water 6 tbsp. Butter 1 tsp. salt 1 tbsp. Flour 1/8 tsp. pepper 2 oz. grated Gruyere (Swiss cheese) pressure cooker Bring the finely chopped onions to a golden brown in 2 tablespoons of butter in the Cooker. Sprinkle with a tablespoon of flour, and stir until the brown color deepens slightly. Pour on 2 1/2 pints of cold water. Add salt and pepper. Put on the lid and cook for 10 minutes after the valve starts turning. Fry a few slices of bread to a golden brown color in the frying pan. Quarter the slices; lay them in the bottom of the soup tureen. Pour the soup on the fried bread. Sprinkle with grated Gruyere. Place the tureen in a hot oven for a few minutes.
