TEMPURA BATTER

 

3/4 c. flour

1/4 c. cornstarch

1/2 tsp. soda

 

Sift together. Stir in 1 cup cold water and 1 egg

yolk. Beat egg white

until smooth and frothy and stir into batter.

Dust squash, yam slices, cauliflower, etc.

to deep fry, in flour. Dip into Tempura batter and fry

in deep vegetable oil

or shortening. 350 degrees.
