It refers to the price of calves taken from milk producing cows who are sold for various purposes--some are raised by hand to become milk cows, others become " veal " , etc. In order to produce milk a cow must have a calf. That begins the lactation process. I do not know what the standard is for organic milk, which I buy in recyclable glass bottles @ my local Coop. I am sure there are some more humane dairies than others, but maybe someone else could speak to that. I live in a huge dairy producing area. I will never forget the time I was standing at a stop light waiting to cross the street and a truck load of " drop calves " went by. They were on their way to the local auction screaming at the top of their baby lungs for their mothers. I was sick to my stomach for the rest of the day.
