I don't have a " recipe " per se, but before I realized that it was dairy that

was causing my respiratory problems, I made quiche all the time.

 

Basically, take a premade crust (home made or bought, whatever you fancy. I

liked to precook mine, just a slight bit, maybe 7 to ten minutes - but it is

not necessary) Cover the bottom with whatever fillings you choose. I would

use up my leftovers this way. (in this case, the spinach and maybe some

veggie " bacon " or " ham " would be good!) Top with a mix of whatever

(shredded) cheese you like - as long as it melts well (vegan cheese likely

will not work), fill the pie crust to level, maybe slightly mounded in the

middle. Do not pack down tight, just sprinkle it in. (one of those

preshredded bags works well. 8 oz, I think?) Mix with a fork 2 to 4 eggs (or

more if doing two pies - most premade shells come in two's) with some milk

(sorry, this is where you will have to experiment. Much depends on taste;

do you want it eggy or cheesy? I am going to stab a guess here at about 1/2

cup of liquid for two pies.) Pour this egg/milk mixture **slowly** so it

seeps into the cheese, and doesn't flow over (in circles all around the

surface of the pie, is helpful. You may have excess, until ya get a feel

for how much you need. if it seems you haven't got enough liquid to fill

between all the cheese, then just add a touch more milk, right into the pie.

or mix another egg with some milk). Sprinkle to taste with salt, pepper,

and any other herbs or spice of choice. Put this into the oven on about 375

for about 45 minutes or until melted and browned.

 

 

Sorry to those who like specific recipes - this is why I rarely post any

recipes on list! I don't cook that way! Just get into the kitchen and

experiment! ;)

 

Come to think of it, if you really need specific measurements, do a

websearch for quiche, and then sub out whatever fillings they suggest for

ones you have on hand. ;)
