Guest guest Posted October 9, 2006 Report Share Posted October 9, 2006 Omelette 2 tablespoons butter 1 green onion, chopped 2 cups frozen hashbrown potatoes Salt & pepper, to taste 2 eggs 1 tablespoon milk mushrooms (original recipe didnt say how many so I just add a few.. it called for something else) 3/4 cup grated cheddar cheese 1/4 pkg. cream cheese cut into cubes Microwave butter and onion on high for 30 seconds. Add potatoes, salt, and pepper. Microwave on high for 2 minutes. Stir; cook on high for 2 more minutes. Lightly beat eggs and milk. Pour over cooked potatoes. Add cooked bacon; stir. Add grated cheese and cubes of cream cheese on top (save a bit of grated cheese for garnish). Cook on high for 2 minutes until egg sets. Check the edges to see if it needs to be cooked longer. Be careful not to overcook; should be moist but not runny. If not done, cook on medium for another minute and check often. Garnish with grated cheese and serve. We usually complement with juice and toast with homemade jam.
