Savoury Sweet Potato Supper

 

This is a scrumptiously easy centerpiece for a light meal. Round off with a

glass of milk, whole-grain bread and a salad.

 

1/2 cup milk

4 eggs

1/2 teaspoon salt

1 glove garlic, halved

1/2 teaspoon each curry powder and dry parsley

1/4 teaspoon powdered ginger

1/2 large red bell pepper, chunked

1/2 medium onion, chunked

1 medium to large sweet potato, peeled and diced (about 2 cups)

1 1/2 cups grated cheese

 

Preheat oven to 375ºF. Place ingredients in blender or processor, in order

listed, except for cheese. Purée until pieces are small but visible. Mix with

cheese. Pour into greased casserole dish or pie plate and bake, uncovered 45 to

60 minutes or until cooked. Let stand 10 minutes before serving. Serves 5.
