I dunno, for far too many years I struggled with cutting up, peeling ,

cooking and putting the finished product through a food mill. My ex was a

pumpkin

purist and it had to be like mama used to make (she grew her own and called

them cheese pumpkins...squat in shape and tan in color), he said the canned

pumpkin always tasted metallic but I think it was all in his head. Once I got

rid

of him, I became liberated and have since only used canned pumpkin. Have had

no complaints thus far.

 

I guess it really depends on how hard you want to work at this and how

important authenticity is to you.
